WHAT IS ACRYLAMIDE
Acrylamide is a chemical compound which is basically used in the industrial processes. It is used in the manufacturing of different types of polymers.The production of paper, food packaging, plastics, and dyes are some of the industries in which it is used. Even in the cigarette smoke, acrylamide is present. Most humans inhale that and get exposed to this toxic compound.
Even throughourfood, we can get exposed to acrylamide.
Acrylamide was found in French fries and potato chips in the year of 2002.Acrylamides are even found in baked products like biscuits, bread etc.
CANCER RISK
The research done on animals show that it is a carcinogen to animals. It changes the DNA and causes cancer in animals.Although the risk is probable and not definite, there is no harm in being careful. But acrylamide is not the only substance increasing the risk. Other lifestyle changes also play a big role in the development of cancer.
Water, sugar and the amino acids present in food when cooked together create aromas, flavors,and color. This change in color, brownness in the food produces acrylamide. It is a byproduct ofcooking.
All this doesn’t mean that you stop having your tasty treats but alter the way we prepare these recipes.
To decrease the level of acrylamide in the food following simple steps can be followed.
- Not storing potatoes in therefrigerator.
- Avoid deep frying of the potatoes.
- Don’t refrigerate potatoes before cooking.
- Don’t overcook any meal as it loses its nutritional value.
- Follow the instructions which are given on the packaging material of various foods.
- Have a healthy and balanced diet.
